Pink Gelatin Marshmallows YUM!
These fluffy pink gelatin marshmallows are not only delicious, but they’re a perfect hormone-balancing snack.
Beef gelatin is an excellent source of collagen, which is great for our digestive health as well as our skin, hair and nails. And it’s also a great source of bio available protein which helps to keep blood sugar balanced – so no nasty blood sugar spikes.
Ingredients for gelatin marshmallows
- 1 cup of filtered water
- 2 generous tablespoons of organic honey
- 3 tbsp of grass-fed gelatin (we love Ossa Gelatin)
- Optional: 1 tsp of beetroot juice for natural pink colouring
Method
- Leave your gelatin to bloom in half of the cup of water
- In the meantime, add your honey, beetroot juice (if using) and the rest of the water into a pan and bring up to a gentle simmer
- Pour the hot honey mixture over the gelatin, and whisk using an electric hand whisk
- Keep whisking for around 5-6 minutes until the mixture has become thick but is still pourable, like a marshmallow cream
- Pour into a glass container and leave to set in the fridge for 2-3 hours
- These gelatin marshmallows are delicious served in an (unsweetened) hot chocolate.
- Heat 1 cup of unsweetened cashew or coconut milk with 1 tablespoon of cacao and a pinch of salt. Then add in 3-4 marshmallows and enjoy!
- This is a great alternative to coffee in the morning – the cacao contains a small amount of caffeine but it’s nicely balanced with protein and fat from the marshmallows and cashew or coconut milk. This will provide a steady source of energy throughout the day.
